

| SHEILA'S DALLAS-STYLE CORNBREAD DRESSING! 125 net carbs for entire recipe - compare to 230 grams of carbs you'd expect from low-fat, high-carb ingredients! 1 package low-carb cornbread mix (any brand, found on the Internet, health food stores, larger supermarkets, & even dollar stores! Follow directions on package & set aside) 1 medium onion, chopped 8 stalks celery, chopped 1 box sage, or to taste 1 T black pepper 6 eggs 3 cans chicken broth Crumble cornbread, then mix all ingredients together. Consistency should be rather "soupy." Pour mixture into large, Pam-sprayed baking dish. 350º for 45 minutes or until bubbly & done. |

Approximately 110 net carbs for entire recipe - compare to approximate 346 grams of carbs you'd expect from low-fat, high-carb ingredients! 5 medium sweet potatoes, rinsed & peeled ½ stick butter 3 T cinnamon ½ cup heavy cream 7 packets of Splenda or 2/3 cup Brown Sugar Twin 1-2 packages low-carb marshmallows (All ingredients may be found on the Internet, in supermarkets, or health food stores.) Chop sweet potatoes in large chunks. Boil until "fork-tender." Remove from heat & drain very well. Add cinnamon, heavy cream, & "sugar," mixing extremely well until consistency of homestyle mashed potatoes is achieved. Add mixture to baking dish. 40 minutes at 325º. Cover completely with marshmallows & place in oven until melted & ever-so-slightly toasted. I promise you: you'll flip out and fool everybody. |
| Sheila's Even-Husband-Can-Do-It Peanut Butter Pie From Sheila's Super-Simple Low-Carb Desserts cookbook! 82 net carbs for entire recipe - compare to the 350 grams of carbs you'd expect from using high-carb ingredients! 12 ounces peanut butter 8 ounces cream cheese, microwaved 30 seconds to soften ½ cup heavy cream 1 cup Splenda 1 cup heavy cream, whipped for topping You can begin with a pie crust, or save carbs by skipping it. (For crust: I sometimes throw together ½ cup of almond flour & ½ cup of walnut flour with ½ cup butter, ¼ cup water, ½ cup Splenda. Bake 10 minutes at 350º. 30 net carbs & simple!) Mix thoroughly together peanut butter & cream cheese. Mix in heavy cream & Splenda. Once completely mixed, spoon contents in pie tin. Cover & chill overnight. Add whipped heavy cream before serving! |

| HOLIDAY MOCK MASHED POTATOES 23 net carbs for entire recipe - compare to 260 using low-fat, high-carb ingredients! 1 large head of cauliflower 1 T minced garlic 1 T minced onion 4 T butter 4 T sour cream Pepper to taste Cut all stems off cauliflower & boil 30 minutes. Drain as well as possible & transfer to oven-safe dish. (I love using disposable aluminum pie shells.) Mash cauliflower down thoroughly with fork until it all looks & feels like true, bona fide mashed potatoes. Add remaining ingredients (except for sour cream) & pop in preheated oven set to 350ºF for 5 minutes. After it cools for a few minutes, add sour cream! |
| SHEILA'S LOW-CARB CHRISTMAS CRANBERRY SAUCE 34 carbs for recipe - compare to approximate 130 carbs for low-fat, high-carb ingredients! 4 cups cranberries ½ cup Splenda ½ cup Brown Sugar Twin 1 tsp. vanilla 1 tsp. cinnamon (optional!) Cook cranberries in water on Medium heat until they begin to flatten a bit. Transfer to bowl. Add "sugars," vanilla, & cinnamon - and you're all set! |
